Founded by long-time friends and seasoned hospitality professionals Massimiliano Bosio, Marco Piroli & Gaetano De Simone, Without Papers is more than just a bar – it’s a love letter to heritage, identity, and the shared culture of London. Marco Piroli – Originally from Rome, Marco moved to London in 2008 and built a career in top venues such as Soho’s LAB BAR, COYA, and various luxury hotels and private clubs across London, Italy, and the Caribbean. With a passion for cocktails, wine, and heartfelt service, he brings warmth and creativity to WOP.
Massimiliano Bosio – Milan-born Massi came to London in 2008, starting at Floridita before leading LAB BAR. He’s overseen beverage programs at some of London’s finest hotels and restaurants. His mix of classic technique and innovation ensures quality and originality at WOP.
Gaetano De Simone – Raised in Naples and now based in London, Gaetano has worked both on the floor and behind the bar. A passionate wine expert pursuing a diploma, his experience includes D&D London, the Corinthia in Malta, and several fine dining restaurants.
“Without Papers is a British Italian cocktail pub, offering a mix of cocktails influenced by both Italy and UK, fine selection of Italian and English wines, beers, and food. We aim to become the neighbourhood’s favourite spot by blending the best of Italian hospitality and British Pub culture Heritage encompasses many things. It’s about our ethnic roots, of course, but it also includes cultural teachings and personal experiences. It’s about who you are and where you have come from to get to where you are today. For us our heritage has shaped our value, goals, personality and much more. Our Heritage defines us and we want to share it through hospitality.”
